Beautiful Butternut Squash and Spinach Soup


1 butternut squash, peeled and chopped into chunks

Half a large bag of Spinach

1 stock cube (gluten free/ yeast free as required), fresh homemade stock or shop bought fresh stock

Water (if using stock cube)

Onion, peeled and finely chopped (optional)

Onion salt and garlic salt (if not using onion

Coconut oil

To begin saute the onion (if using) in a little coconut oil until translucent). If you suffer from IBS you may find that onions make your symptoms worse as they are high in fermentable carbohydrates (carbohydrates which are avoided on the FODMAPS diet) which can cause wind, bloating, diarrhoea and constipation. So if this is the case simply leave out the onion. You can add exra flavour simply by seasoning with onion and garlic salt and the soup will still be (I assure you!) delicious. Once onion is sauteed then add the butternut squash and cook in the coconut oil for 4-5 minutes until softened. Now add your stock or water and stock cube / home made stock.  Bring the soup to the boil and then simmer for 20 minutes or so until the butternut squash is tender. Now add your spinach and cook for another 5 minutes. Allow the soup to cool slightly then puree in a blender until smooth. serve immediately or refrigerator / freeze until needed.
