Guilt Free Cookies!

These cookies have the benefit of

being both wheat free and sugar free

and can be made gluten free by

excluding the oats and increasing the

gluten free flour accordingly or by

using gluten free oats.

 

Ingredients

40z butter or dairy free marg such as Pure

30z xylitol

1tsp of xanthum gum

3tsps of boiling water

few drops of vanilla essence

40z of gluten free self raising flour

20z of oats

 

Oven temperature 175 C Makes about 28 using 2 large baking sheets

1. Cream the butter and xylitol. Add the boiling water and essence

2. Stir in the flour and oats

3. Roll mixture into small balls and place on the greased baking sheets. Flatten slightly

4. Bake at 175C for 15 minutes or 170C if oven is fan assisted
