Warming Lentil Soup

Nothing can beat a wholesome

warming soup for lunch and this

recipe ticks all the boxes! Dairy free,

vegetarian, vegan and gluten free, this

soup is also suitable for those trying

to lose weight.  It can be prepared in

advance either on the hob or in a slow cooker and also freezes well.

 

Ingredients

3 tablespoons of olive oil

1 onion peeled and chopped

2 celery sticks, chopped

1 carrot peeled and chopped

2 garlic cloves crushed

1 potato peeled and diced

250g (1 1/4) cups of red lentils

750ml (2 3/4) cups of  veg stock. Use gluten free stock cubes or bouillon powder if

needed

2 bay leaves

 

1.Gently fry the onion in the olive oil until slightly softened (about 5 minutes). Add the

carrots and celery and fry for a little longer to soften the veg

2. Add the diced potato, stock, lentils and bay leaves

3. Bring to the boil, turn down the heat and simmer for about 20 minutes until the

lentils have disintegrated and the veg is very soft.

4. Leave to cool slightly then puree using a hand blender.

5. Serve immediately or freeze once cool
