Ingredients
- 1/2 sliced avocado
- 5 or 6 cherry tomatoes on the vine
- Handful of chickpeas from a tin or defrosted from frozen
- Few slices of yellow pepper
- Cubed butternut squash / sweet potato (hot or cold)
- Shredded red cabbage
- Little gem lettuce sliced
- Few small slices of water melon
- Cress to decorate
- Low sugar honey and mustard salad dressing
Directions
- Arrange all ingredients in a bowl
- Drizzle with a little of the salad dressing
- Enjoy!
