  • 1/2 sliced avocado
  • 5 or 6 cherry tomatoes on the vine
  • Handful of chickpeas from a tin or defrosted from frozen
  • Few slices of yellow pepper
  • Cubed butternut squash / sweet potato (hot or cold)
  • Shredded red cabbage
  • Little gem lettuce sliced
  • Few small slices of water melon
  • Cress to decorate
  • Low sugar honey and mustard salad dressing


  1. Arrange all ingredients in a bowl
  2. Drizzle with a little of the salad dressing
  3. Enjoy!
