Blueberry power balls

Ingredients
- 4 dates, pits removed
- 1 cup of walnuts
- ½ cup of macadamia nuts (can
- replace with walnuts if you
- don’t like these)
- 2 tablespoons of coconut oil (or
- sunflower oil)
- ½ cup of fresh blueberries
- ½ cup of unsweetened shredded coconut (if not using in balls could substitute for more nuts)
Instructions
- In order to make the power balls place the dates in a food processor until a paste forms (usually about 40 seconds)
- Add walnuts and macadamia nuts and blend until very finely chopped (about 35 seconds)
- With the blade still running, drizzle in coconut oil and stop as soon as the oil is blended in.
- Scrape the batter into a bowl and stir in the blueberries and 1/4 of the shredded coconut
- Form the batter into round balls
- Store in fridge
