Warming lentil soup

  • 3 tbsp olive oil
  • 1 onion peeled and chopped
  • 2 celery sticks chopped
  • 1 carrot, peeled and chopped
  • 2 garlic cloves, crushed
  • 1 potato peeled and diced
  • 250 grams of red lentils
  • 750ml of vegetable stock (use gluten free stock cubes or bouillon powder if needed)
  • 2 bay leaves


  1. Gently fry the onion in olive oil. Add the carrots and fry for a little longer to soften the veg
  2. Add the diced potato, stock, lentils and bay leaves
  3. Bring to the boil, turn down the heat and simmer for about 20 minutes until the lentils have disintegrated and the veg is very soft
  4. Leave to cool slightly, then puree using a hand blender
  5. Serve immediately or freeze once cool.
  6. If desired drizzle a little natural yoghurt on the top and sprinkle with pumpkin seeds
