Warming lentil soup

Ingredients
- 3 tbsp olive oil
- 1 onion peeled and chopped
- 2 celery sticks chopped
- 1 carrot, peeled and chopped
- 2 garlic cloves, crushed
- 1 potato peeled and diced
- 250 grams of red lentils
- 750ml of vegetable stock (use gluten free stock cubes or bouillon powder if needed)
- 2 bay leaves
Directions
- Gently fry the onion in olive oil. Add the carrots and fry for a little longer to soften the veg
- Add the diced potato, stock, lentils and bay leaves
- Bring to the boil, turn down the heat and simmer for about 20 minutes until the lentils have disintegrated and the veg is very soft
- Leave to cool slightly, then puree using a hand blender
- Serve immediately or freeze once cool.
- If desired drizzle a little natural yoghurt on the top and sprinkle with pumpkin seeds
