Cabbage & apple salad

Ingredients
- 1 small head red cabbage
- 4 large carrots, shredded
- 2 apples, cored and very thinly sliced
For the dressing
- 1 tbsp dijon mustard
- 1 garlic clove minced (optional)
- 1/3 cup extra virgin olive oil
- 1/4 cup unfiltered organic apple cider vinegar
- 2 tbsps lemon juice
- 1 tbsp honey as needed for sweetness
- 1/4 tsp chilli powder or to taste (optional)
- salt and pepper
- chopped fresh parsley
Instructions
- Place shredded cabbage, carrots and apple in a large salad bowl. keep to one side
- Mix together the mustard, garlic if using, oil, apple cider vinegar, lemon juice, honey, chilli (if using) and salt and pepper. Mix well until blended
- Pour dressing over the salad ingredients and toss to combine
- Taste for seasonings and adjust accordingly
- Dress with chopped parsley
- Serve!
