Oat pancakes with berries

Ingredients
- 100g oat flour or finely ground oats
- 1tsp baking powder
- ½ tsp cinnamon
- pinch of salt
- 1 ripe banana
- 150ml almond milk
- 1tsp vanilla essence
- olive oil or coconut oil for cooking
- raspberries (around 200g)
- 1tbsp of honey
- splash of hot water
Directions
- If using finely ground oats then grind the .
oats to a flour in the food processor then
tip into a bowl and mix with the baking
powder, salt and cinnamon - Place the banana, milk and vanilla in a
food processor and blend until smooth. - Pour the wet mixture into the dry mixture
and stir until fully mixed. Put this in the
fridge while you make the raspberry
compote - Roughly chop the raspberries and place
them with the water and honey and
simmer for around 10 minutes - Around 5 minutes before the raspberries
are ready, heat a tablespoon of oil in a
frying pan. Put a few tablespoons of the
batter and fry in the pan for a few minutes
then flip over and cook for a minute until
cooked through. Repeat with the rest of the
mixture.
Serve the pancakes with the raspberry
compote and add extra honey if needed
