Oat pancakes with berries

  • 100g oat flour or finely ground oats
  • 1tsp baking powder
  • ½ tsp cinnamon
  • pinch of salt
  • 1 ripe banana
  • 150ml almond milk
  • 1tsp vanilla essence
  • olive oil or coconut oil for cooking
  • raspberries (around 200g)
  • 1tbsp of honey
  • splash of hot water


  1. If using finely ground oats then grind the .
    oats to a flour in the food processor then
    tip into a bowl and mix with the baking
    powder, salt and cinnamon
  2. Place the banana, milk and vanilla in a
    food processor and blend until smooth.
  3. Pour the wet mixture into the dry mixture
    and stir until fully mixed. Put this in the
    fridge while you make the raspberry
  4. Roughly chop the raspberries and place
    them with the water and honey and
    simmer for around 10 minutes
  5. Around 5 minutes before the raspberries
    are ready, heat a tablespoon of oil in a
    frying pan. Put a few tablespoons of the
    batter and fry in the pan for a few minutes
    then flip over and cook for a minute until
    cooked through. Repeat with the rest of the
    Serve the pancakes with the raspberry
    compote and add extra honey if needed
